LET'S TAKE YOU BACK TO THE BEGINNING

Coffee begins on the side of a mountain in Columbia, or volcano in Cost Rica, not in a long line at the neighborhood coffee shop. Our beans are grown in the same place we’ve been growing them for 60 years. On high-altitude mountainside farms with their unique Terruño; the precise PH and minerals of the soil, the perfect sunlight and humidity and the ideal rain needed to cultivate the perfect coffee cherry.

Coffee has deep roots in the history of our home community in Ybor City, FL. Cuban immigrants founded the cigar industry and built the neighborhood in the 1800’s. They brought the social ritual of coffee breaks to the cigar factories along with their infamous café con leche. And the neighborhood’s second obsession was born.

Ybor City visionaries recognized that coffee was bigger than just a break in the day. They journeyed into the jungle to meet coffee growers. Truebrew still works with many of the same farms they discovered 3 generations ago. We honor and nurture the relationships they forged to ensure we continue their process of harvesting, roasting and selling the most exceptional coffee available.

In a world of mechanized coffee growers and cheaper “strip” harvesting, the entire plant is picked on a schedule, leaving some beans unripe whilst others are past their peak. Truebrew farmers are connected to the rhythms of the land and handpick every bean at its peak of ripeness. Our high-altitude farms demand that we hike through the mud and scale the steep mountainsides to hand select each cherry and ensure our beans grade 85+.

On a 1-100 scale, beans that grade 80+ are considered “specialty” beans. Truebrew takes this a step further and uses beans that grade 85+. Only the top 5% of beans picked in the world make this grade. Because ultra-specialty beans are the only way to be certain that each bag will be the best coffee of your life.
