Our Story

THIRD-GENERATION

Cuban and Italian immigrants shaped our home of Ybor City in the late 1800s, bringing with them old-world roasting traditions and the social ritual of the coffee break.

Coffee quickly became a cornerstone of the community, and these early pioneers traveled the jungles of South and Central America to meet growers and seek the most flavorful beans. Today, Truebrew continues to source from many of the same farms they discovered generations ago, honoring their legacy with every roast.

HIGH ALTITUDE

Truebrew sources its beans from high-altitude farms located primarily on volcanic mountainsides in Colombia, Costa Rica, Mexico, and Guatemala. These unique
environments provide the ideal terruño, a combination of soil minerals, climate, and
farming traditions that shape the rich flavor of our coffee.

HAND PICKED

We believe in work done deliberately, by
hand. When coffee cherries are harvested by machine, the entire branch is stripped at once. Some cherries are underripe, others are overripe, and the result is uneven flavor.

Our coffee is 100% hand-picked, meaning we return to each plant several
times during the harvest, selecting only the cherries at their peak of ripeness. It’s slower work, but it’s how we ensure every bean tells the story of care and craftsmanship.

SPECIALTY GRADE 5%

We only use specialty-grade beans from the top 5% of all coffee produced worldwide. While beans in the top 10% are considered specialty, Truebrew goes beyond this standard by sourcing ultra-specialty beans to ensure every bag delivers an exceptional coffee experience.

SMALL BATCH

Small batch roasting allows us to control heat, timing, and airflow with precision, for a more consistent and balanced flavor.

Our master roaster monitors each batch closely and adjusts in real time based on the beans’ moisture, density, and response to heat. This level of attention prevents scorching or uneven roasting, preserving the natural character of the beans. The result is a fresher, higher-quality cup with more depth and reliability.

SLOW ROASTED

We believe great coffee deserves time and respect.

Our Master Roaster combines modern technology with traditional craftsmanship to optimize our slow roasting process for a deeper, more balanced flavor. As heat gradually moves through the bean, natural sugars caramelize instead of burn, creating richer notes and smoothing out harsh edges.

This slower process preserves the aromatic oils that shape the scent and finish of the coffee. The result is a cup with more character, nuance, and consistency, every time.
